Drop kids off at in laws. Kidnap Matt and drive for a few hours. Find a cheap hotel with a jacuzzi tub and spend some alone time. Come back when we feel we've accomplished what we want to :)
I would go streaking
Pick up hubby and go to the ice hotel spend a week on ice

Escape to Europe on a one way ticket
Go to India, live off savings, and try to create a startup there. Possibly in the arts or sciences, something for the more rural areas that are connected via smartphones.
Drive over there I the dead of night and wisk her away with me to go explore the world .
