I've pulled off many good surprises in the past, usually gifts are best for her. The best surprise she could give me is actually participate in icebreakers.

He is not really into surprises but I think waking him up a really gentle way - you know what I mean ;)- haing dinner ready by the time he gets home after work, or preparing breakfast/lunch for him, waiting for him in wonder woman costume hahaha
With guns. She'd be happy if I came home with a bouquet and a new gun for her.
